Can't even drink soup? The lady boss will teach you! --The spirit of craftsmanship in Beef Soup on Kangle Street, Tainan

The two aunties sitting across from us came in a few minutes earlier than us. I saw one of them took a piece of meat in the soup, put it in a small plate, dipped it in bean paste, and put it into his mouth. This scene was seen by the proprietress who was passing by—"Oh, it's not like this!" The proprietress stretched out her hand across the two, blocking the soup bowl, preventing her from picking up the second piece, and said in a slightly reprimanding tone... …

Every time I come to Tainan, in addition to my luggage, I will definitely remember to bring a few more pairs of stomach bags, so that my stomach won’t be able to fit the old-fashioned delicious snacks all over the street.

This trip was no exception. Yesterday around 9:00 am, my wife and I set off on foot from the B&B near Chikan Tower and walked one kilometer to the well-known milkfish porridge shop to wake up our stomachs with a bowl of fish maw porridge. Then go west along the second section of Fuqian Road, connect to Kangle Street, go straight to Yongle Market, and eat bowls of cake and swordfish soup. After eating, the stomach is satisfied, but the heart is not satisfied - ten years ago, when we visited Yongle Market, we drank the beef soup from the old shop, and it was amazing. It's a pity, just arrived at the door of the store, but after ten o'clock, the soup has been sold to the bottom of the pot...

Although there was a trace of regret, at least the first few snacks helped us replenish our vitality, and our feet stretched out and walked towards the surrounding places of interest. Before we knew it, we walked eight kilometers and were ready to go back to the B&B to rest. On the way to the Chikan Tower from Section 3 of Minzu Road, we passed Kangle Street again. I turned around and saw a small shop that was not very conspicuous. There were three or five diners lined up at the entrance to lead the diners looking in. The sign said " Kang Lok Street Beef Soup" .

The food eaten in the morning, even after the digestion of walking, still has 70% left, so I could not eat it. However, the regret of not having the beef soup fermented in my heart, and at the same time, I was afraid of stepping on the thunder and destroying the impression of Tainan beef soup in my heart. After a while of hesitation, we finally decided to join the queue; if it wasn't delicious anyway, it's great to get up early the next day and go back to the old shop for gastric lavage and memory washing.

There are not many seats for Beef Soup on Kangle Street. A long table and a table against the wall cannot accommodate even ten people. Among the diners, in addition to a few people who knew at first glance that they were from other places like us, there were also a few Ojisan and Obasan who were dressed at home and were drinking soup. It seemed that they were local people. As soon as I see the local people, my heart is much more at ease, and I won't step on the thunder.

After fifteen minutes, we were finally seated. Before we sat down, our appetites were roused by the fragrance of beef soup and fried oil. We immediately ordered beef soup, dry fried beef brisket, fried vegetables and two bowls of rice.

The two aunties sitting across from us came in a few minutes earlier than us. I saw one of them took a piece of meat in the soup, put it in a small plate, dipped it in bean paste, and put it into his mouth. This scene was seen by the proprietress who passed by——

"Oh, it's not like this!" The proprietress stretched out her hand across the two of them, stood in front of the soup bowl to prevent her from picking up the second piece, and said in a slightly reprimanding tone, "Our beef doesn't add any seasoning, we just want to Eat it as it is. You ruin its taste with sauce, how can it be delicious? Please, give me a chance, don’t dip it in sauce, you will definitely taste its taste.”

The proprietress is too long-winded, isn't it? Does dipping sauce make a big difference? ——Just when this thought popped into my mind, I caught a glimpse of a notice on the table with a "Tasting Tips" to teach diners the correct way to eat. Sure enough, the third item clearly states "meat, please don't use dipping sauce." The other three items emphasize how to drink soup. The last sentence "When you reach the fourth sip of soup, your mouth will tell you that this soup is so good that it won't lose to the French soup! "

After a while, our beef soup was served, and the soup was dark brown in color and seemed nothing special. The proprietress seems to be very powerful, and the notice is written as if it is very proud. Is it self-promotion?

I took a sip - um... it doesn't seem to be anything special. Compared with the beef soup next to Yongle Market, it is really bland and tasteless.

Take the second sip -- it can't be said to be bland and tasteless, and if you taste it carefully, the original aroma of the beef gradually diffuses in the mouth.

Take a third sip--

It tasted! I tasted the layering contained in the lightness and began to hit my taste buds!

The newspaper introduction posted on the wall reveals the key to deliciousness: the boss uses beef bones, old hens, and pig skins as the base of the soup, plus carrots, onions, apples, etc. Sweet and slightly sour, it sublimates the thickness of the soup -- to be honest, it really does not lose the soup of French food!

Can't wait for the fourth sip, I picked up a piece of red shabu-shabu and put it in my mouth. After chewing for a while, the soft and tender pieces of meat melted in the mouth, and the gravy was overflowing. My wife and I didn't stop the chopsticks to grab the beef.

At this time, the dry fried beef brisket and stir-fried green vegetables were served, and the two of us, with great appetites, hurriedly attacked the beef brisket. The beef brisket is soft and chewy, with endless taste. I eat it with rice, and I immediately finish half a bowl of rice. The moment I picked up the spoon to scoop out the soup—

" Wait a minute! " The sharp-eyed proprietress shouted to stop my actions, put down the work at hand, walked to me and said, "You guys just ate a heavy dish, you can't drink the soup now, otherwise it will spoil the taste of the soup. . I advise you to finish the dishes first, and then finish with the soup. Try it out, okay?"

We obediently obeyed the instructions of the proprietress and kept the soup until the end of the meal--really! Until we finished the last mouthful of soup and walked out of the store for a long time, the flavor that this bowl of beef soup brought to me in the first place was still lingering...

This soup not only subdued my stomach, but also subdued my heart because of the professional spirit displayed by the owner's persistence.
