Beyond those words, where the stories haven't been told, we survive, and make the best out of it. 煮字、嚐書、過日子。

Second Hand vs. Olivier Salad

This is a famous dish in high-end restaurants in the tsarist era, and it is also a delicacy for the people to celebrate the Communist Party's rule. It is an exotic flavor on the menus of European countries. For me, it is a footnote to finish eating "Second-hand Times".

"Second-hand Times" was put on the bookcase and turned yellow. A while ago, when I was isolated at home in a dorm room, I thought of taking it off and reading it. While reading it, I was full of immediate sense of sight. Passion for socialism, trust in communism, hate and love for capitalism.

With the "Gulag Meteorologist" and "The Moscow Gentleman" I read before, it may be the best time to read in the current atmosphere.

In short, let me summarize first. Although it is a bit psychologically circuitous, it is actually a very direct feeling: it is absolutely impossible for us to have the same national identity and values as the Chinese, and it is even more impossible for us to be compatriots or brothers to each other.

"Second-hand Times" mentioned a dish " salat Olivye" , which is a Russian delicacy enjoyed during festivals. The Communist regime was established after the October Revolution in Russia, and November 7th is the National Day, which everyone likes to call "the most beautiful day on the calendar". Every family prepares Olivier salad to welcome family and friends to celebrate.

Olivier, a chef who opened a French restaurant in Tsarist Moscow, invented the dish, which today appears to be a potato salad. The main ingredients are potatoes, carrots, peas, onions, pickled cucumbers, grouse, lobster, caviar and smoked duck were also added in season at the time, and most importantly, the sauce recipe that made this salad a hit .

After this dish was spread to the people, most families replaced the expensive meat with affordable ingredients such as chicken breast and ham, and the sauce was mainly mayonnaise. Enjoy it when you have a happy event.

This dish is called "Russian salad" in other parts of Europe. There are also various versions of it after entering the country. The most important point is that all the ingredients should be cut into similar sizes, which can be used as a side dish or as a main dish.
