Snow matured wines are on the market one after another

Japanese sake that has been stored in snow for more than two months is usually suitable for ice-drinking. In the mid-to-late 1990s, experienced brewers began to use a large amount of winter snow to build a mature space with stable temperature and humidity that is not easily disturbed by the external environment. No electricity needed yet! The wines scheduled to be released in mid-to-late April are also marketed as part of summer wine.

Since 1997, Takasago Brewery in Asahikawa City, Hokkaido has transported whole barrels of new sake to Biei Town for about 100 days of aging in the snow. This year's work time is from 2020/12/26 to 2021/3/25. After taking out Junmai sake (Comet) and Junmai Ginshu (Ginfu), additional work such as burning and bottling will be carried out. When stored in snow, the overall temperature of the wine barrel will be maintained at about -2°C, with little temperature change and almost no influence of air convection, which is a stable aging environment.

The Susukinoi store in Omachi, Nagano, will carry out the operation of "Hakuba Nishiki Junmai Ginseng in the Snow" brewed in Omachi's sake rice from 2/10 to 4/9, 2021, and buried more than 3,000 bottles of 1.8L Japanese sake in the uniform. It matures for two months in snow with a temperature of 0 degrees and a humidity of 90%. The Boui store has been using snow to mature Japanese sake since 1995. It is the first sake brewer in Nagano Prefecture to do so, and this is the 27th time.


Aomori Prefecture sake and rice interchange brewing

Due to the impact of the Wuhan pneumonia epidemic, the sales of Japanese sake have been greatly reduced. In September 2020, Aomori City Nishida Brewery (Tianshu), Hirosaki City Miura Brewery (Toy Cup), and Hachinohe Hachinohe Brewery (Hachisen) decided to join forces to make a "Three ツ" Tomoji ~ あおもり Sake Rice プロジェクト" project, providing the rice that we cultivated by ourselves to the other two partners, and the three companies are unified at the same time. Koshino Shu*Kura will only operate in Gunma Prefecture in June
