### Ingredients
- For the filling:
- 1 pound shrimp, peeled and deveined
- 2 tablespoons bamboo shoots, finely chopped
- 1 tablespoon cornstarch
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1/4 teaspoon white pepper
- 1/2 teaspoon salt
- For the dough:
- 1 cup wheat starch
- 1/4 cup tapioca starch
- 1/4 teaspoon salt
- 3/4 cup boiling water
- 2 teaspoons vegetable oil
### Instructions
1. Prepare the Filling:
- Chop the shrimp into small pieces.
- In a bowl, combine the shrimp, bamboo shoots, cornstarch, sesame oil, soy sauce, sugar, white pepper, and salt. Mix well and set aside.
2. Make the Dough:
- In a mixing bowl, combine wheat starch, tapioca starch, and salt.
- Gradually add boiling water while stirring with a spoon until a dough forms.
- Add vegetable oil and knead until smooth.
- Divide the dough into small balls (about 1 inch in diameter).

- Roll each dough ball into a thin circle.

- Arrange the dumplings in the steamer, leaving some space between each.
