All purpose flour 400 g
Blueberry Juice 200 ml
Shirai yeast 8 g
Water (for mixing yeast) 40 ml
【practice】
1. Rinse the blueberries and add a little water to make juice
2. Mix yeast and water first
3. Mix all-purpose flour, blueberry juice and yeast water together until smooth and not sticky
4. Put the dough into a pot and cover it with plastic wrap or cover with a damp cloth for the first fermentation (60 minutes)
5. After the dough has doubled in size, take out the kneading rod and press and divide it into small balls (about 10-15 grams per ball)
6. Put the dough on the steamed bread paper (baking paper) and put it in the steamer for the second fermentation (30 minutes)
7. After the second fermentation, steam it in cold water for 5 minutes, then turn to medium-low heat and steam for 20 minutes
8. After steaming, turn off the heat and simmer for 5-8 minutes, do not open the lid immediately
9. Let it cool down a little and then open the lid and take it out
【Precautions】
1. If the yeast is changed to general instant yeast, the amount can be reduced by half, and there is no need to add water and mix it first, but the blueberry juice needs to be increased.
2. When steaming the steamed buns, do not cover all the pot lids. You can use a chopstick to make the sides slightly slanted to avoid dripping water.
3. Do not open the lid directly when opening the lid, and remove the lid by holding it obliquely.
