My love of cooking is definitely in my dad's genes, and my dad has been the chef in my family for as long as I can remember.
I also inherited his dietary taste, that is, he especially likes to drink hot soup.
On a rare Sunday, I decided to make soup today - the herbal package of soup and water used today is Codonopsis pilosula .
Candied dates are added by myself.
I also slightly increased the amount of red dates and wolfberry - my family eats it, so the ingredients must be sufficient.
Next, I will give you a brief introduction to the efficacy of various herbs.
Codonopsis - suitable for those with weak constitution, lack of qi and blood, and postpartum frailty after illness.
Beiqi - invigorating the spleen and qi, diuresis and swelling.
Poria - strengthens the spleen, strengthens the stomach, calms the mind, improves memory.
Candied Dates - Beneficial for the spleen, moisturizing the lungs, strengthening the kidneys, invigorating qi and promoting blood circulation. (I would love to use candied dates to add natural sweetness to the soup)
Red dates - enhance immunity, calm and soothe the nerves. (Women should take more)
Dried longan - nourishing blood, nourishing qi and anti-aging. (Women should take more)
Lycium barbarum - increase immunity, protect liver and eyes. (Women should take more)
Remember to rinse the ingredients well before placing them in the pot.
My mother taught me to blanch chicken before cooking chicken soup to remove blood. This action can make our chicken soup clear and not dirty, and secondly, the effect of blanching can also remove the chicken smell. Today I blanch the chicken in warm water for about 10 minutes.
After the chicken was blanched, I washed it again with cold water. Set aside for backup.
In the end, I first boil a pot of hot water and put the herbs directly into the pot, except for the wolfberry, because it is not easy to cook for a long time, it will destroy its original nutrition. Usually I put the wolfberry just before turning off the heat. I let the herbs boil for about 10 minutes before placing the chicken. The amount of chicken used today is 5 large L-shaped drumsticks. (A chicken leg is cut into three pieces, and the hawker helped to handle this)
After the soup boiled, I turned to low heat and let it cook by itself for 1 hour (slow heat, too high heat, the chicken is easy to rot, and the chicken soup is not enough)
After about an hour of cooking, the chicken is soft enough, so I add wolfberry and cook for 5 minutes, then add sea salt to taste and it's done.
No MSG was used, only sea salt was used for the seasoning.
Add noodles and a simple herbal chicken noodle soup is done!
