Self-sufficient living | If you don't germinate, you will be old (9)

Editor's note: From a writer to a writer, to a sturdy farmer who is friends with the soil, readers can almost find various identities in her articles. And this full text is all about self-sufficiency, complete manual labor, and even after reading it, you will want to rub your hands and go to the kitchen to pour out your own rice grains, pry it open, soak it, and let yourself germinate with it to see!

While writing this article, I cook myself a pot of porridge full of vitality.

There are more than a dozen kinds of rice in one pot, and the rice is brought back from Taiwan. They are the Taiwanese version of Koshihikari brown rice from farmers, the Ruiyan fragrant rice brown rice grown by myself, Fujian local soybeans, mung bean, black bean edamame, white bean pinto bean, local black rice, Xinjiang chickpeas, Anhui wheat grains, Sanya jackfruit seeds, red and white peanuts... I really can't remember anything else. I always counted to 16 when I put them in the pot. Now I can't remember what else-- The classic symptoms of Alzheimer's disease, the things just done will be forgotten. Rensen, I really can't help getting old, where is my unforgettable memory?

Soothe your wounded little heart, let go of this problem, and don't worry about what is in it. No matter how many things you cook, it's good to cook and eat happily.

make the truth delicious

Did you notice that all the rice mentioned is brown rice? In fact, it is not just brown rice. All the materials used in this pot of porridge are the original food. Rice, wheat, beans, and peanuts are all seeds that can germinate. La!

The reason why this pot of porridge is full of vitality is not to say that it has a lot of content. Cooking one type of porridge alone is also full of vitality, as long as two key points are grasped: one is the seed, and the other is germination.

It must be a seed to germinate, but there will be people protesting immediately, saying that the seeds are not delicious. Indeed, some seeds are not even edible. For example, the seeds of rice are millet, and I have never seen one that eats millet directly. Rice must be milled to eat, but we can choose between polished and brown rice. The rice made of refined white rice is soft and glutinous and delicious, but brown rice is not delicious. It is just a control group, and it is difficult to chew with various tastes, especially for the elderly and children. But to be reasonable, the elderly and children especially need the nutrients in brown rice. Polished rice only retains the endosperm, mainly starch. Compared with brown rice, the nutritional difference is not a little or two. Please look at the picture without talking nonsense. This is just found on the Internet. The watermarks of others are all there. If you are interested, you can search the Internet by yourself. .

The life energy of plants is stored in the seeds, brown rice is more nutritious, and the same is true of all kinds of beans in the original grain. This is an indisputable truth. The problem is that these principles are not delicious. My specialty has always been "making the truth delicious" . Back then, in Yilan, Taiwan, the village brewer made agricultural waste brewing, mainly using cold weapons, and brewing at room temperature turned waste into treasure. Now we use cold and hot A combination of ways to make those babies get the most out of them. The first thing to ask is - germination.

transformation with germination

In order to pass on life, the rice mother put on many layers of clothes for her baby. The outer coat is a hard rice husk with thorns and awns that cannot be swallowed, and the underwear is rice bran. Brown rice just grinds off the husk, leaving the germ and bran layer outside the endosperm. The germination of brown rice can not only effectively transform the nutrients that are not easily absorbed in rice bran, but also become sweet and delicious.

My approach is very simple:

The first day, soak in advance. Wash in the evening and soak overnight.

The next day, wash and change the water. I usually flush and change the water every three or four hours. So spend the second day. If the weather is hot, put it in the refrigerator the next night. Now I am in a high-altitude mountain village with cool summers and natural temperatures throughout.

On the third day, the babies were all just about to sprout. This time is not only delicious and nutritious, but also transforms harmful substances. Seeds are not born to be eaten by humans. There are some innate defense mechanisms for life. In addition to various armors and underwear, there are also chemical weapons such as phytic acid, and research has proved that crops grown in modern fertilizer and pesticide agriculture are phytic acid. higher content. I will not copy the impact of phytic acid on health from the Internet, but directly say: the process of germination and fermentation can convert phytic acid, reduce harmful ingredients + convert them into beneficial ingredients for people.

In this way, the germinated rice and beans are put into the electric cooker in the evening of the third day, and when you wake up in the morning, you can eat the full-bodied mixed bean porridge.

Simplify the hassle

This pot of porridge is good, but it's too troublesome. Not everyone is a professional foodie like me and can guard a pile of seeds for water changes. So is there a simplified solution?

Of course, there are simplified solutions. The first step of the simple algorithm is to merge similar items. This time, I divided the boxes to facilitate observation, comparison and photography. Usually, all the things that need to be put into the pot are mixed into a basin, which is extremely simple and rude. .

After full soaking, it can even continue to be simplified: just change the water twice a day, once in the morning and once in the evening, but then you must put it in the refrigerator to cool down to prevent fermentation and rancidity. Because the temperature in the refrigerator becomes lower, it is not easy to reach the best heat, and the time needs to be extended for half a day. In fact, it is not a problem to put it into the pot with a little less heat. The life transformation inside the seed has already happened.

Even with this simplification and simplification, some people still find it troublesome: it takes too much time. It takes three days to get a pot of porridge, and the input-output ratio of time is seriously out of balance.

There are also simplified solutions: if you do it once instead of eating one meal, you can greatly improve efficiency. Single dogs can also fill the electric cooker as full as possible to get a huge pot of mixed bean porridge, which is what I did. Cook the porridge and let it cool before repacking, set aside the rest of the day and put it in the refrigerator, refrigerate for the next day, freeze the rest, and take it as you eat it.

I have a stomachache when I eat rice, so I specialize in mixed bean porridge. Families with rice as the main food can make it according to the law, and change the polished rice into sprouted brown rice, which not only doubles the nutrition, but also improves the taste. It is seen on the Internet that some families also add a little whole wheat or rye when soaking the rice to germinate, because the children in the family like the chewy texture of the wheat in the rice. This is not only nutritionally balanced, but also beneficial to the child's teeth occlusal ability, maxillofacial muscle development, etc., all in all.

Sustainable recycle rice: The capacity of the box I use is about one liter, and the soaked rice is enough for a family of four. As long as there are three boxes in the refrigerator to take turns, and after eating one box and then soaking another box, it is not too troublesome. .

Even so, there must be people who find it troublesome, and there is a way of "buying convenience with money". The Japanese first invented the "brown rice germination rice cooker", which saves trouble. Put the rice in a few hours in advance, and the electric cooker is responsible for heating Keep warm and germinate before cooking into rice. It's convenient, but it's very expensive. It costs two or three thousand, which is more than ten times that of an ordinary electric cooker. You can search on the Internet yourself.

A reminder: only fresh brown rice can germinate, so please be careful when buying rice.

Don't let youth grow old alone

I have to tell the truth, although I have been cooking mixed bean porridge for a long time, and sprouting mixed bean has been practiced for a long time, but such laborious germination of brown rice started recently.

The direct cause was a bag of brown rice that had traveled thousands of miles across the ocean, and the indirect cause was that I went to Taiwan to farm as a farmer a few years ago. Indirect causes go a long way, so let's talk a little bit first. There are always many dreams in life, such as farming dreams, but many dreams are just dreams, because the body that carries the dream is not old, and it will be old if you live.

We carry many innate gifts in our lives, including our dreams and ability to work. And life has a time limit. If we never use it in our entire life, what a pity it would be. Life is easy to get old, and if you have a dream, you must hurry up and implement it. Otherwise, you will have a thief’s heart but no courage, and soon one day you will be so old that the thief will disappear. It’s really sad in life. At the age of 50, if you don't farm, you will be old, and you should seize the little labor capacity you have left to become a farmer.

Use your life to the fullest, there will be many unexpected gains, such as this package of rice. In 2019, the young farmers in Yilan cherished and presented it to each other. It is the proud variety "Tainan 16" that Taiwanese are proud of. Japanese Koshihikari rice is delicious. I have met many Koshihikari fans in Taiwan, and some of our farmers also have hard-won authentic Japanese Koshihikari, but the yield and taste are far from expectations. Taiwan is too warm, and Koshihikari in cold areas only cares about growing, blooming early, and getting old early, and the ears of grain are not solid and full, making farmers happy. Taiwanese agricultural experts began to localize Koshihikari decades ago. It is said that the "Taiwan version of Koshihikari" is named Tainan 16 using three Japanese Koshihikari parents and one Tainan local variety.

Taiwan version of Koshihikari close-up (forgive it was exposed...)

This precious bag of rice came with me thousands of miles, and it was vacuum-preserved very well. But no matter how well it is stored, it cannot be stored forever. Brown rice is alive, and if it stays like this, it will grow old.

I dared to make brown rice germination for the first time in my life. I didn't expect to win a big victory. The germination rate and taste experience were beyond imagination.

When these sprouted brown rice were turned into delicious porridge, it was safe to eat, and suddenly a flash of inspiration came: What if I didn't cook it after germination, but turned it into seeds and planted it in the ground? The climate of Fujian is different from that of Yilan. If Yilan can plant, Dawu must be no problem! ——In that case, I can have my own "Yueguang in Dawudi" to live on and on.

Let's keep farming!

Dawudi Yueguang and Dawudi Ruiyan

The idea of "The Great Wu Di Yue Guang" is really exciting. As soon as you say it, soak the rest of the panning and soaking to germinate immediately, and do it in time for the last time when these brown rice can still germinate. My hands are faster than my brain, so I always do it first. After soaking the seeds, I found myself confused and doing the right thing again.

It is mid-June now, and we are cultivating and transplanting seedlings in a normal manner. The harvesting period does not arrive until mid-November. Our village is a high-altitude area, and it is too cold at the end of October. But, but, the important thing is said three times, and it can also be broadcast live-note that it is not the "live broadcast" of live TV broadcast on the Internet, but: directly scatter the seeds into the paddy fields without going through the step of raising and transplanting rice seedlings.

Fortunately, I have practiced in Taiwan. In the spring of 2019, I had a good time in Taiwan and experienced different ways of raising seedlings, because it was my last year of farming in Yilan, and it would be too late if I didn’t try it. Direct seeding directly planted rice seeds in paddy fields, reducing the damage to the root system caused by pulling and transplanting, and shortening the growth time by 15 days - just before cooling.

It's really better to come early than to be smart, and to learn early is worse than to learn smart. So extended to others, the equally precious Ruiyan fragrant rice can also be turned into "Dawu Dixiang rice" in this way.

Ruiyan is the name of an ancient tribe. This ancient rice species is highly accessible, with low yield and thick skin. It retains many of the characteristics of wild grass and has been lost. Due to fate, due to the need to restore tribal rituals, the frozen remains were dug out of the refrigerator, and were cultivated and restored by research institutions.

Ruiyan has an irreplaceable fragrance, and it is wonderful to soak in water and wine. But no matter how much you bring back, it will eventually be used up, and no matter how well you keep it, the life of brown rice is limited. Inspired by this, I have a flash of inspiration, which led me to find endless possibilities for these precious and wonderful things in Dawu.

If you don’t germinate, you will be old. It’s better to come early than coincidence. It happens that the farmer has an idle paddy field, so he can live broadcast these distant and magical grains.

In order to prepare the fields in a hurry, for the first time in my life, I used a hanging tiller to hit the fields. Instead of placing the machines on a flower stand, I hit a solid one mu of land. It is not only heavy physical labor, but also technical work. It is also the most difficult mountain terrace in technical work. In the same field, there is a deep water swamp in the east that can trap the machine, and a barren sandstone riverbed in the west. In the tough area of refusing to play, although I am a novice, I have truly achieved a professional level. Playing the sky that afternoon - it was playing the field, I had a great time, I was proud that my upper body and core strength were not in vain, I caught the tail of spring on this land, sowing not only Koshihikari but also Ruiyan, All are songs of life.
